How Many Food Trucks To Book For Your Event

While we are new to the Food Truck business, we are not new to capacity planning. I, the owner, Chris, spent many years in IT planning and executing projects and capacity planning is pretty straight forward for just about anything. You just need to know what you are planning for. In the case of events where you want a Food Truck or two, there are some pretty simple things we have figured out on our own. We also validated some of this through some internet research, and we’ve compiled some of the information in one place for event planners to hopefully use. Also, I get it, you want variety so you want multiple trucks, but that usually ends up hurting each food vendors ability to have a decent sales day. If you have other input please do leave some comments to help others. So let’s get to it and help everyone in the process.

The Flaw With Percentage Based Event Fees

We’ve been up and running now for a few months and done a bunch of events. One thing that is common is paying entry fees to park as a vendor for events or festivals. This is something that is pretty common, and nothing in general we have an issue with at all. Most event organizers charge a flat fee to attend for the day or the weekend. However, we have seen some go down the road of wanting “A percentage of sales” as the event fee. While this sounds like a reasonable practice, there are some inherent flaws with it for both the organizers and you/us the vendor. The hope is that event planners and other food vendors read this and think about the pros and cons we outline below and move more away from this option to a simple flat entry fee.

An Open Letter From The Owner July 26, 2024

Over a year ago I started this journey to bring something new to town. June 11th, 2023 marked the day I started to create our Facebook and Instagram Pages and started on the website design. June 30th, 2023 I formed HiTek Food Service, LLC dba The Wicked Pissah Deli. July 6th, 2023 I signed the quote to order the truck many of you have seen. Between and after those key dates, many things took place. Billboards, Facebook ads, building relationships to park, and establishing accounts with vendors. For months I was excited at the prospect of something new and getting out of my old world. I was laser focussed and was convinced I had “most” things figured out.

Cash or Credit, You Pay The Same

As we get closer to hitting the road, the topic of “Convenience Fees” and “Surcharges” is something we see lately as a consumer ourselves. Interestingly we had a question on our November Survey about this and the responses were interesting. We will show those down below but let’s hit the main point from our perspective as a merchant and as a consumer. Personally we don’t like this way of doing business (as a consumer), and as a merchant we’ve researched it and frankly….there’s too many things you are “supposed” to do to be compliant with the merchant agreements. So when it comes to our new food truck, what does this mean to you?

Our Pre-Launch Survey Results

Through the month of November, we ran a quick survey for folks to provide us some valuable insight before we get our truck on the road. The survey is still open but the bulk of the responses are in and we promised to share some of them with you here in December. We can say the information was VERY useful to read and YES we did read every bit of the freeform feedback. As of this post we had over 100 people submit the survey, and many of which did opt in for the drawing which will happen later. Let’s start with the easy graphical responses before we get into the more detailed freeform ones.
